More from "Cooking with Carrie"

Okay, so "cooking" is a loose term, here. Last Christmas (not the one we had just a few weeks ago, but the one before that), a friend sent me a package filled with presents and goodies, and in amongst them was a cellophane bag of what she called "Sugar Crack."

SUGAR CRACK.

Do I have your attention?

Uh huh. That's what I thought. Anyhoo, I only had a nibble of this stuff, but I'd been thinking about it, off and on, for over a year. A YEAR, folks.

Sugar. Crack.

*cough* Got sidetracked. I was all grinchified this Christmas, but it's January and I don't care about all those New Year's resolutions that I never made anyway, so I went on a candy making spree today.

Well, not a spree. I made some candy, though. In a very controlled and not all strung out on sugar way at all.

(Oh, yes. And this is [livejournal.com profile] seegrim's recipe. She gets the credit.)
Cast of Characters

3 sticks (one and a half cup of butter) (BUTTER. I'll revisit this later...)
2 cups sugar
2 cups Karo syrup
1/2 tsp. vanilla
1 large box of Golden Grahams
1 large box of Rice Chex (or corn or whatever)
1 cup slivered almonds
1 bag white chocolate chips

(my new cookbook holder that I got when I returned a Christmas present that I didn't care for. Cute, huh?)

Combine first three ingredients, which included the three sticks of butter. (THREE STICKS, y'all. And let me just say, there is no substitute for the real thang. Margarine is not even FOOD. it's one molecule away from being plastic. Don't eat that! Use butter. Yummmmmm, butter. Okay, that's all. Sorry, I digress. Back to your regularly scheduled recipe.) Bring to a boil, Boil for three minutes.

Pour the cereals and the almonds in a ginormous bowl. This particular bowl is from the circa 1970's Tupperware line that my Granny gave me. In another 7 years, I bet this color will be cool, again.

Here's your sugar crack boiling...

Take off stove and add in vanilla. I eyeball stuff. Measuring is for wimps.

Dump heated sugary mix on top a bit at a time and stir together. And this sugary, buttery mix is the stuff that all really great things must be made of. Goodness GRACIOUS, yes.

Add chocolate chips and stir again. And really, I do not endorse "White Chocolate" chips. They are NOT chocolate. They're little chunks of emulsified lethicin that have come as far as they have on the hard-earned reputation of REAL chocolate. Usurping chocolate's good name. Hrmph. I raise my eyebrow at them.

*raises eyebrow*

Yet, I dumped them in, anyway. Having double standards make us interesting people, right?

I decided to spread out the mix on some wax paper and let it dry that way. That's about 3 feet of candy right there. It makes my heart go pitter-pat, it does.

Aaron says, "This stuff is AWESOME."

So yeah, call CPS. I'm feeding my kids the crack. :D
