I'll go ahead and answer. Yes, my lovely readers. Yes, I do.

It's strange, given my absolute loathing of tapioca pudding, but this stuff is amazing and easy. make it today. You'll thank me. My kids did.

All your rice pudding dreams are about to come true.



First, I'd like to introduce you to Winston, my new favorite toy. He's a Le Creuset dutch oven, and I love him.

Now, onto the other stuff. You need all this. Because I am a cooking nerd, I had all this stuff in the pantry or fridge.

1 cup long-grain white rice
2 cinnamon sticks
2 strips of lemon or orange zest (can use a peeler to get a larger piece)
3 whole cloves or a tiny pinch of ground cloves
4 cups water
1 egg
3 cups whole milk
1 (12-ounce) can dulce de leche
1/4 teaspoon salt
1 tablespoon vanilla
1/2 cup raisins (optional, because wrinkly things in other stuff is gross and I'll have none of it)

Soak the rice, cinnamon sticks, lemon or orange zest and whole or powdered cloves in the water in a heavy saucepan for 1 hour.

Like Inigo Montoya, I hate waiting. This was the hardest part.

After soaking, bring the rice mixture to a boil on high heat, uncovered. When it starts to boil (about 5 minutes), lower the heat to medium and cook for 10 to 12 more minutes or until water is almost evaporated.It should look like this:

While rice is cooking, beat the egg in a bowl.

Add the milk and stir well to mix. You can also try to stir the Dulce de Leche in. I did, but I think it might be easier to add it separately.

In the background there, you see Liam, Aidan's successor. He's a little cranky, but it's probably operator error. All in all, I like him. On the other side of him is my notebook for the [livejournal.com profile] dgficexchange with notes and some scenes already written out.

It's a secret, of course, the whole who wrote what thing, so I've blurred it. But suffice it to say, I'm having problems. The tense is screwed and the characters won't shut the heck up, but I have a plot. A good one, I think.

Off the topic, but I've been reading Bones Fanfic, and find myself highly annoyed by noticeably non-American writers using terms like 'dead chuffed' and 'bloody' in dialogue between Brennan and Booth. Apologies to all you Brits for my writing and Americanisms over the last several years. maybe I could get some of you British girls on the f-list to be a beta reader for me, if you're so inclined?

Anyhow, back to the recipe.

Add the egg mixture, salt, vanilla extract and condensed milk to the rice and cook over medium-low heat, stirring carefully, until it thickens slightly or until desired consistency about 25 to 35 minutes, or until it looks like this.

Remove citrus zest and cinnamon sticks. Let cool uncovered, then chill the rest of the way in the fridge.

I like it hot.
